If you're looking for some great low carb dessert recipes, you've come to the right place.

When you're on a low carb diet you do sometimes get a craving for something sweet, and while yes we know strawberries and cream are allowed but you are looking for something more. Perhaps strawberries are out of season in your area, or perhaps you are just sick the the back teeth of eating them.

I've put together a little collection of recipes for low carb desserts that I hope you will enjoy. Simple to prepare and will help you lose those pounds easily. You will not even know you are on a diet with these low carb recipes.

I have chosen recipes here that include Splenda which is a sugar based substitute for sugar with only a quarter of the calories. Splenda has revolutionaised the low carb diet because unlike saccharine and other artificial sweeteners, Splenda is not destroyed by heat and retains it sweet flavor.

These recipes for low carb desserts are eminently suitable for diabetics also, as they will not raise insulin levels within the body.

Recipe for Low Carb Fruit Salad

Ingredients

4 oz Splenda

1/2 pint water

juice of 1/2 lemon

selection of fruit - i.e. 2 red apples, 2 oranges, 2 bananas, 4 oz black or green grapes, 3 kiwi fruit, or whatever other fruit takes your fancy. - strawberries, dessert pears, melon, raspberries and cherries all make good additions.

Prepare fruit as follows:

  • Orange - peel and separate into segments, half some of the segments with a knife.
  • Remove the pips from the grapes, cut half the grapes in half.
  • Peel bananas and slice.
  • Peel apples and de-core, chop into bite sized pieces.
  • Pare the outer coat off the kiwi and slice thinly.

To make syrup dissolve Splenda in the water over a gentle hear and boil for 5 mins; cool and add lemon juice. Put the prepared fruit in the syrup. Mix with a spoon and then leave to stand for 2 hours, to mix the flavors.

Low carb fruit salads are healthy and refreshing, and full of antioxidants which are good for your body.

Serve with fresh cream.

Recipe for Low Carb Lemon Chiffon

Ingredients

3 eggs, separated

3 oz Splenda

juice of 1 lemon

grated rind of 1/2 lemon

Beat the egg yolks and Splenda together until creamy, then gradually add the lemon juice and rind. Heat gently in a thick-based pan or the top of a double boiler, stirring all the time, until the mixture thickens - do not overheat or it will curdle.

Allow to cool. Whisk the egg whites stiffly and fold into the lemon cream mixture. Pile into individual glasses and chill before serving. Eat the same day.

Low carb lemon chiffon is a healthy food choice.

Recipe for Low Carb Rich Vanilla Ice Cream

Ingredients

1/4 pint milk

3 level tablespoons Splenda

1 egg, beaten

1/2 - 1 teaspoon vanilla essence

5 fluid ounce carton double cream, half-whipped

Heat the milk and Splenda and pour onto the egg, stirring. Return the mixture to the saucepan and cook it over a gentle heat, stirring all the time until the custard thickens; strain it and add the vanilla essence. Allow to cool, fold in the half-whipped cream, pour into a freezing container and freeze.

When frozen, serve with fresh fruit salad and/or chopped nuts.

This low carb ice cream recipe can also be used with your home ice cream maker.

Low Carb Pavlova Recipe

Ingredients

  • 3 egg whites
  • 6 oz Splenda
  • 1/2 teaspoon vanilla essence
  • 1/2 teaspoon vinegar
  • 1 level teaspoon cornflour
  • 10 fluid ounce carton double cream, whipped
  • fresh strawberries, raspberries, Chinese gooseberries, passion fruit or any other fruit you fancy, washed, peeled and chopped.

Draw a 7" circle on non-stick baking paper and place the paper on a baking sheet. Beat the egg whites until very stiff, then beat in the Splenda gradually. Beat in the vanilla essence, vinegar and cornflour. Spread the meringue mixture over the circle and bake in the oven at 1500C (3000F), gas mark 1 for about an hour, until firm. Leave to cool, then carefully remove the paper. Invert the meringue on to a flat plate, pile the cream on it and arrange the fruit on top.

Low carb pavlova is a very simple recipe to follow and you won't be disappointed with the result.

Thanks OM! I'm back on a low carb diet but I was on one years ago for nearly a year so I know the 'allowed foods' off by heart. Splenda has made a huge difference to the food choices of low carb dieters :)

Amazon.co.uk, .fr and.de only sell individual granule packets as opposed to a 1lb bag and Amazon.com won't ship to here.(probably international food movement restrictions). Anyway it is far too expensive for my budget so I'll just have to keep drooling LOL
